DESCRIPTION
Karigane is a tea made from the stems, stalks, and twigs left over from processing gyokuro tea leaves. Gyokuro is made from the leaf only, with stems and stalks removed; these separated stems and twigs, which have a different flavour profile, are sold as karigane.
Our Gyokuro Karigane comes from Kyoto prefecture and is shaded for around 20 days before picking. This shading increases the plant's theanine content, producing pronounced umami and sweetness.
The name "karigane" (雁が音) literally means "the call of a wild goose." According to tradition, it refers to the resemblance between the tea stems floating in water and the branches wild geese might rest on during migration.
